Omelet with sauteed grape tomatoes and fresh basil (This was okay, but not as good as the scrambled eggs with salsa. Definitely would have been better with some feta, but this is the life I have chosen.)
Watermelon (Yes, I ate raw fruit three days before my colonoscopy. It's mostly water, right--it's in the name! Watermelon is not a high-fiber fruit, so I figured it was cool. According to this, though, it isn't. I will try to avoid the siren song of my beloved watermelon, but that will be hard.)
Lunch
One boiled egg. Yep. Let me explain: today was not a shining example of great planning. I dropped my daughter off at day camp, but I wasn't hungry when I got home. So I went for a long walk, and by the time I came back and got my omelet cooked, it was almost 10:30. I then cleaned bathrooms and took care of some other stuff, and by the time I was done, it was just about time to leave for an appointment. I wasn't terribly hungry, but I figured I should eat something before I went, so I grabbed a boiled egg from the fridge.
When I got home, I wasn't feeling great--probably because I hadn't eaten much more than three eggs all day. Normally, I'd have had some nuts, apple slices with almond butter, or carrots, but I can't have any of those things right now (stupid colonoscopy). Anything compliant is off limits during prep. I was almost in despair, but when I opened the door, I was greeted by the smell of the chicken I had in the crock pot. I had completely forgotten about it, so that was a welcome surprise. (I had just thrown it in there to have chicken on hand for chicken salad and future meals.) It was done, so I had some, and now I feel much better. Here's the recipe; I recommend you make some too. (I added onion and celery to give it a little more flavor, and also because the celery was sadly wilting in my fridge.)
Dinner
Roasted spaghetti squash, tomato basil sauce (jarred from Aldi), ground beef, leftover roasted broccoli
This was far better than it had any right to be. I'm a huge snob about jarred sauce--I make my own, dammit! But my own has some brown sugar and some red wine, and I didn't want to mess with perfection by altering my sauce recipe. My usual problem with jarred sauce is that it's too sweet, but this one, of course, has no added sugar. I actually had seconds. Huzzah!
Week One Reflections
- Keep a shit-ton of boiled eggs in the fridge.
- Don't do colonoscopy prep while on Whole30.
- Lettuce tacos, spaghetti squash with meat sauce, and sweet potato bowls will all stay on the menu when Whole30 is over. They are legitimately tasty.
- This really hasn't been too hard, but I'm not going to get smug or complacent. I started Whole30 during the chillest week of my year, and I'll finish it during a time that is busy and exhausting. Things aren't going to be so easy when I go back to work on Friday.
