Breakfast
You know. I will be having the sweet potato bowl until I get sick of it. Sadly, I used the last of my wild Maine blueberries this morning, so it's regular old NC blueberries from now on.
Lunch
Egg salad, carrot sticks, watermelon
I tried putting my egg salad on a leaf of Bibb lettuce, and it was a big old nope.
Unless I get a bolt of inspiration, I'm thinking it will be egg or tuna salad pretty much all the time. It's delicious and satisfying. Thinking ahead to going back to work, I really want something taco-ish; I'm thinking of W30-ifying this awesome taco bowl.
Despite my little compromise, I still have a bit of a headache. This is bullshit.
Snack
I was a little peckish, so I had some leftover carnitas straight out of the fridge. I also sipped a LaCroix while I read on the porch. I love summer vacation.
My daughter's friends are sleeping over tonight; usually, that means we order pizza. I can handle pizza being in the house, but I don't know that it will be pleasant. Dealing with restaurants and takeout is going to be the hardest part, I think. I've already decided that it will be okay to get fajitas at our local Mexican place. I don't plan to ask what they're cooking the meat and vegetables in, because I don't really care.
So far it really hasn't been too difficult because life is very chill right now: we're home from vacation, and I don't have to go back to work until next week. I have plenty of time to plan and prep food. Stress is minimal, and free time is plentiful. That will all change soon.
Dinner
Leftover carnitas wrapped in Bibb lettuce with cilantro and salsa. Now this was tasty. I like tortillas fine, but they are not the star of the taco show.
Finished the leftover squash.
Mark brought home chicken wings for dinner, and though I was a little bit tempted, I didn't have one. I really want my favorite work pants (Old Navy Pixie pants, woot!) to be less tight when I put them on in two weeks. (This was never about inflammation. We all know that.)
Now having some of that Tazo citrus tea, and I'll be ending the night with a big old bowl of watermelon. I love you, watermelon.
Looking ahead to next week, here are some dinner ideas:
- salmon cakes (from the Whole30 book)
- meat sauce over roasted spaghetti squash (really psyched about this, though I'm not sure why)
I need to find some new recipes soon.
